BALSAMIC VINEGAR OF MODENA PGI GLAZED ONIONS AND FETA ON A GRILLED GREEK LAMB BURGER

Makes 4 burgers


INGREDIENTS Balsamic Glazed Onions

  • 1 1/2 teaspoons vegetable oil

  • 4 cups onion, sliced thin

  • 1 tablespoon garlic clove, minced

  • 2 tablespoons brown sugar

  • 1 teaspoon salt

  • 1/2 cup Balsamic Vinegar of Modena PGI

Grilled Greek Lamb Burger

  • 1 pound ground lamb

  • 1 tablespoon fresh oregano

  • 1 tablespoon fresh parsley

  • 2 tablespoons garlic

  • 1 teaspoon black pepper

  • 1/4 cup Balsamic Vinegar of Modena PGI*

  • 1 teaspoon sea salt

  • 1 teaspoon paprika, as needed

  • 1 cup feta cheese

  • 4 buns

  • Balsamic glazed onions, as needed


DIRECTIONS

  1. For the balsamic glazed onions: heat oil on medium-low, add onions and garlic, and sauté until they are clear.

  2. Turn the heat up, and sauté until they begin to caramelize. Add the sugar, salt, and Balsamic Vinegar of Modena PGI, and cook until the liquid has fully reduced. Remove and chill.

  3. For the grilled Greek lamb burgers: Combine ground lamb, herbs, Balsamic Vinegar of Modena PGI, salt, and pepper, and mix to incorporate. Do not over-mix.

  4. Form into four patties and grill or pan-fry to desired internal temperature (155°F minimum).

  5. Serve burgers on buns, and top with crumbled feta cheese and balsamic glazed onions.


*The Protected Geographical Indication (PGI) is the name of an area, a specific place, or, in exceptional cases, the name of a country, used as a description of an agricultural product, which comes from such an area, place, or country, which has a specific quality, goodwill, or other characteristic property, attributable to its geographical origin, at least one of the stages of production, processing, or preparation takes place in the area. The European Union (EU) will only give a product PGI status if they decide it has a reputation, characteristics, or qualities that are a result of the area you want to associate with. It is the PGI logo that guarantees the consumer about the authenticity of the product they are buying.
