Mushroom Toast with Balsamic Vinegar of Modena PGI
Ingredients
Sourdough bread, oiled ( 1 )
Fresh Garlic cloves ( 1 )
Recipe Porcini Spread ( 2 )
Recipe Marinated Mushrooms ( 3 )
Toma Cheese ( 3-4 )
Fresh rosemary ( 3-4 )
Balsamic Vinegar of Modena PGI ( 1 )
Maldon Salt ( 1 )
Black Pepper from a mill ( 1 )

Procedure
-
Char Sourdough bread in the Salamander same as all bread
-
Warm Mushrooms in broiler at same time as bread

Rub charred sourdough with garlic, three times
-
Spread the Porcini spread across the toast, evenly
-
Top with warmed mushrooms and 3-4 torn pieces of Toma cheese (use scraps)

Place toast back under salamander just to melt the cheese

Remove from the bread from the salamander and top with maldon, Fresh cracked black pepper,
a few rosemary leaves and drizzle Balsamic Vinegar of Modena PGI
